For sub 2 weeks I've used AT&T at $10/day for unlimited data. When overseas for long term projects I typically buy a local SIM and use WhatsApp for all intl calls

In France, got Airalo (Orange) 50GB Europewide and an Orange prepaid sim for local calls. Working really well. Consistent 200M DL speed

I've used https://www.gigsky.com/gigsky-app eSIM when traveling to Europe and it was super easy to setup (download app + in-app purchase)
