Still so jet lagged after returning from India, so I made myself breakfast at 5:45am today :) A crispy fried egg on ciabatta with bacon (bread and bacon were from a local cafe)

Editing photos from a recent trip to Vermont for an upcoming blog post ๐Ÿ”๏ธ Last year I took a skiing lesson and was able to ski a green run comfortably for the first time. Iโ€™m hoping to try skiing again sometime this winter. โ›ท๏ธ I got back to New England yesterday from a trip to India to see my in-laws, and the winter cold is making me want another hot chocolate like this one. โ„๏ธ Iโ€™m a bit too jet lagged today for much cooking, but maybe Iโ€™ll make some later this week. :)

I think steam is a good solution. You may also want to try lowering the heat while you cook the eggs if the yolk is solidifying too quickly :)

Great question! Once I crack the eggs on top, I let them cook on medium heat until the egg whites are almost set (but not completely cooked). Once they are almost cooked, I remove the pan from the heat and place a lid on top, letting the steam finish cooking the egg white and egg yolk. This helps prevent the yolk from overcooking :) Hope this helps!

Usually I store potatoes in a cool dry place away from light, but if Iโ€™m going to use them later that evening I sometimes just put them in a bowl on the counter after buying :)

Making Shakshouka I like to use lots of fresh herbs and then top it with chunks of feta cheese before serving. :)
