I've never used serverless functions and I want to keep it that way.

I just use servers, RPCs, workers, go routines, queues, etc.
Depends on the scale things that are running on the same server can be moved to other servers/workers and scale horizontally as needed.

"Severless" basically does a bunch of this for you I suppose but likely with added cost and such.
