A seasonal idea to match the weather ….

1st course- spanakopita with fin herb salad, apple shaves, shaves of cheese dressing of lemon juice, olive oil, shallot.
2nd course- Braised lamb shanks +potato dauphinoise + glazed spiced carrots

Btw - if you ever make it to Ikaria, they make the best pies than any place in Greece there. Diane Kochilas has a cookbook specifically with recipes from this island.
