Making Shakshouka I like to use lots of fresh herbs and then top it with chunks of feta cheese before serving. :)

I have never been able to get my whites to set before my yolks end up being chalky. What's the trick?

Great question! Once I crack the eggs on top, I let them cook on medium heat until the egg whites are almost set (but not completely cooked). Once they are almost cooked, I remove the pan from the heat and place a lid on top, letting the steam finish cooking the egg white and egg yolk. This helps prevent the yolk from overcooking :) Hope this helps!

For me when the white is set, yolk is already overcooked. I have seen some videos where they would add some water and cover instantly so that the eggs steam.

I think steam is a good solution. You may also want to try lowering the heat while you cook the eggs if the yolk is solidifying too quickly :)
