Great question! Once I crack the eggs on top, I let them cook on medium heat until the egg whites are almost set (but not completely cooked). Once they are almost cooked, I remove the pan from the heat and place a lid on top, letting the steam finish cooking the egg white and egg yolk. This helps prevent the yolk from overcooking :) Hope this helps!

I have never been able to get my whites to set before my yolks end up being chalky. What's the trick?

Usually I store potatoes in a cool dry place away from light, but if I’m going to use them later that evening I sometimes just put them in a bowl on the counter after buying :)

is that where you keep your potato or do they happen to be there for some other reason
