that is actually surprising risotto + cannoli should have a lot of carbs my guess is the amount of fat in the food slowed the carb absorption into blood did you notice a difference in how long the blood glucose levels stayed elevated

Yeah I was very surprised too and the fat mediating carb absorption is a good hypothesis. There was a lot of butter in the risotto and cheese in the cannoli. Here’s the chart as of last night. Looks like spike 1 (apple) resolved fairly quickly while spike 2 took longer to get back to baseline More cannoli may be required to know for sure.
