Fresh hearts of palm are a special ingredient. They have a texture that is special and reminds me of cooked artichoke. Flavor is nutty I paired it up with raw macadamia nut/ rhubarb and herbs from my garden

Have only ever used hearts of palm from a can. Is it naturally a soft texture like how it comes in cans or do you do anything to prep it before chopping it up into a salad?

Most of the heart is really tender once you peel back a few layers and if it is fresh. For this dish I roasted a bunch of it and the really tender pieces I sliced raw dressed with lemon juice/ macadamia oil.
