Can’t decide… since it’s a while I’ve not been eating amatriciana and I eat carbonara pretty every week I’ll go for the amatriciana

carbonara is more difficult but i like it better, amatriciana is simpler! in both cases you should fry the guanciale, and leave it at rest for a couple minutes then complete the cooking time of pasta with the fat oil that came out of it, finally put the guanciale back in with the sauce (carbonara egg sauce or tomato according to what you’re cooking)
