Aren’t you in Cali? Should be plenty of flavor by mid June. We’re a month away from the start of tomatoes on the Southcoast, while some early tomatoes sacrifice flavor, should still be able to make the dish worthwhile.

you gotta rub some garlic on some crusty toasted bread and then micro plane the tomato pulp directly onto it then salt, basil + maybe a little olive/basalmic drizzle depending on mood.

Make sure to mix the oil, balsamico vinegar and (Maldon) salt between the tomatoes and mozzarella. It will taste so much better!

these tomatoes look like they haven't been salted - you need to do that from both sides and let them sit a little to bring out the natural umami flavor. also: black pepper is missing!
