It sounds silly but normal "round" spaghetti has a rounder taste πŸ˜‚ as in, less pronounced. It overcooks a bit more easily and is more chewy. I might be wrong but the square corners cook less easily than the centre, so they remain al dente. But yes overall the shape of the pasta does make a difference - udon is a good example
