Today I cooked a new comfort food. Itโ€™s a red lentil stew with coconut milk and a bit of curry, topped with spinach and sesame seeds. I learned to cook this two winters ago. Itโ€™s very easy to make, very nutritious, and it brings warmth. Itโ€™s not a dish from my childhood or even from my culture, but it has become a comfort food for me. Whatโ€™s your comfort food?

Looks delicious, I'm going to try cooking this, I don't remember the time I ate lentils the last time๐Ÿ˜ƒ and I never tried coconut milk๐Ÿ˜Š

It is very simple. You just need red lentils and spices - I use garlic, onion, black pepper, thyme, salt, some curry or at least turmeric. When it is cooked, add the coconut milk - quantity depends of how much lentils you have. Half of a can should be enough. I cook the spinach very briefly separately with onion, salt and pepper and add it on the top.
