Today I cooked a new comfort food. It’s a red lentil stew with coconut milk and a bit of curry, topped with spinach and sesame seeds. I learned to cook this two winters ago. It’s very easy to make, very nutritious, and it brings warmth. It’s not a dish from my childhood or even from my culture, but it has become a comfort food for me. What’s your comfort food?

I love lentils and coconut! For me, a comfort food that’s not from my Italian culture is a hot and spicy tom yum prawn soup or a tom kha if we want to stay in the coconut theme!
