Less decentralized networks can be valuable. If you're storing low value NFT data, using 7 servers (Arbitrum Nova) is cheaper than global consensus (you trade off security) and less risky than relying on one. With a centralized server they can just decide one day to shut the division down and poof your NFT is gone

That’s a fair point — there is room for a middle use case that’s neither pure P2P consensus nor a single mainframe.

The reason I resonate with Ethereum is its affordability for anyone to spin up a node and validate the chain. I believe this is where the most value of blockchains comes from: users always having the option to rely on as few external parties as possible "Don't Trust Verify"
