if you were to relearn math & physics from scratch, how would you do it? broad question, but really referencing to anything - books, courses, order of subjects, etc.

For a broad survey of practical physics - Giancoli is the book: https://www.amazon.com/Physics-Scientists-Engineers-Douglas-Giancoli/dp/0132431068/ref=mp_s_a_1_23

I firmly recommend that - it’s important to be able to see the diagrams, etc. I’m still looking for the math ref rec, but once you have the math foundation this is the best reference manual for doing the physics version of any math https://www.amazon.com/Mathematical-Methods-Physical-Sciences-Mary/dp/0471198269
