Except the companies and individuals running the email servers host all the emails sent and received by everyone. It’s a good analogy, but I think technically it’s not the most accurate. However, it helps convey the idea.

Yes, but for email, servers only host the emails of sender <> receiver. There might be other details, but I think this is a major difference
