Ratatouille π π πΆοΈ Such a staple September dish! Makes use of all the seasonal veggies π - a can of diced tomatoes - 1 red onion - garlic - 3 cloves - 1-2 aubergines - 1-2 zuccinis - 3 tomatoes - 4 bell peppers - pesto - 150 gr (store bought or homemade) 1. Prepare a tomato sauce - fry onions cut into half rings, add crushed garlic and canned tomatoes. Reduce a bit, season to taste (I always add italian herbs and sugar). 2. Cut bell peppers into quarters. Grill them in an oven skin up on 180Β° for 10-15 min, until the skins turn black. Then put them in a bowl and cover with a lid, wait for them to cool a bit and then peel the skins off. 3. Cut aubergines, zuccinis and tomatoes in circles about 0.5 cm thick. 4. Take a rectangular baking dish, pour the tomato sauce in and lay out the veggie pieces - aubergine first, then zuccini, tomato and pepper. Repeat until there is no more space. Salt them and spread the pesto on top. 5. Roast on 180Β° for about an hour until soft. Bon appetit!
