What is the best "order book type" (i.e. not using bonding curve ala Uniswap) DEX out there? I got asked the question and I am surprised I could not come up with a name 👀 I initially would have said 0x but I think they pivoted away from that vision...

Onchain order books are hard to do efficiently, though there’s some progress here: https://www.youtube.com/watch?v=xUosFwSdVU0&t=51m14s Hybrids like CowSwap (and I think UniswapX) do off-chain decentralized order matching, but fall back to AMMs.

Thanks! Yup I had uniswapX in my radar but, as CowSwap, it falls back to AMMs ultimately as you're saying. Seems like Eth Mainnet cannot is too limited for proper order book trading... which now reminds me of Etherdelta as well 😅
