i didnt think about it either and then i got like 5# the other day and was grating ginger. Just happened to try it with the pepper and it worked great. the ceramic grater cuts the pepper in a way that keeps the floral notes of the pepper without muddling the flavor from oils in cutting board or food processor/blender
