I'd be remiss if I didn't mention this article, did read it before I started doing this https://www.theatlantic.com/family/archive/2019/03/eating-the-same-thing-lunch-meal/584347/

Is it a function of decision fatigue or laziness?

neither! I wanted to lose weight (while eating healthy) and I thought "automating" my lunches was a great idea after a bit of reading I decided that I was looking for a recipe with brown rice + pulses of some kind

I tried three for a few weeks each - the rice and beans linked above - mujadara (https://cookieandkate.com/mujaddara-recipe/) - chana masala (https://cookieandkate.com/quick-vegan-chana-masala/) rice and beans got the top spot! man it's actually really tasty

looking back at these, the rice and beans was also the only 1-pot recipe (which helps quite a bit with meal prep, especially since on Sundays my wife will be making her stuff as well as our daughter's)
