https://dishingouthealth.com/spanish-rice-and-beans-one-pot/ My variations: - brown basmati rice (more fibre) - i use spice mixes sometimes (Harissa paste / powder works quite well) - no need for the fire roasted tomatoes, just salad tomatoes are fine (no cans though, too watery)

In my psych degree we were taught of a study comparing lunch choices of 2 groups - group 1 choosing ahead & group 2 on the day. Those who chose in advance vastly overestimated their desire for variety Those who picked on the day tended to choose the same thing or a way narrower range Always found that interesting!
