As an European I think you can. If you refer to the cultural aspect, Europe has several cultures but we all share some similarities as we mixed together for centuries. From a geographical point of view, we are used to live on a limited amount of space compared to US or Russia or Australia for instance, and distances are short between each city. Our cars look the same all over Europe for this reason. We do bike a lot too. Also we have political level and the EU and so we share common laws and debate all together in the same parliament. So yes, you can say Europeans and it's fine even more since Brexit.

I’d rather just refer to people by the country they’re from and not generalize it

Well I understand this tbh They’re different types of cultures there basically so it’s quite wrong to generalize everybody

idk as an european I don't mind. There are certain aspects of life experience that europeans share IMO. We often travel around europe, many countries have shared customs and food preferences, majority of europe has "western 'white people' culture". It's the same as saying East Asian, or African, while they have a lot of differences between countries / regions, they do have some shared experiences that are too foreign to people from other continents

In Spanish - “Americanos” can refer to all folks from the Americas I think - that’s why team America in the City of Mexico has a continental tilt to it I think
