I see a lot of casts about cr锚pes lately. I'm French, and my region has made cr锚pes its specialty, so here鈥檚 my recipe and my tips, you鈥檒l know everything. **Utensils and Cooking:** * 1 mixing bowl * 1 whisk * 1 cr锚pe pan or billig * 1 spatula First of all, cr锚pes at my place are a weekly tradition, we even have a dinner consisting solely of cr锚pes. We add salted butter, sugar, jam, chocolate, salted caramel, it's a moment of sharing with friends or family. **Quantity for 12 cr锚pes:** * 250 g of wheat flour * 50 g of salted butter * 60 cl of milk * 4 large eggs * 2 tablespoons of powdered sugar * A pinch of fleur de sel First, mix the flour, salt, and sugar, then add the eggs to form a large ball. Slowly add the milk to avoid lumps, that's what I do, but some people add the milk first and then the eggs, it's up to you. 馃憞

Heat the cr锚pe pan to a high temperature (8/10), and once the surface is hot, grease it with a cloth or pad lightly soaked in butter or a mixture of neutral oil (like sunflower or canola). Pour a ladle of batter onto the cr锚pe pan and swirl your pan to cover the entire surface. Don鈥檛 make it too thick, remember, it鈥檚 not a pancake. Cook the cr锚pe for about a minute, then flip it with a cr锚pe spatula and continue cooking for a moment on the other side. It should be golden like in the picture. Hello again! I have to say, making crepes for the first time was an adventure! The batter slipped off the pan so many times, I thought it was trying to escape. I ended up with a few thick pancakes at first鈥攂ut after a few more tries, the crepes finally started to come out thin. I did end up with some mystery silhouettes鈥︷煠攕till not sure what or who they are, haha. But hey, I managed to make mini crepes in the end! 馃槄

You need to tilt the pan very quickly so that the batter covers the entire surface of the pan and makes large, round pancakes. If there鈥檚 a hole, add more batter, and yes, it needs to be very thin. I hold the crepe pan in my hand at a height and turn it to spread the batter over the entire surface.

You need a strong wrist flick and to turn very, very quickly, shaking the pan so that the batter slides.
