If you make it to Kyoto, you have a lovely half-day in Arashiyama. Put your name down in the morning for a spot at Steak Otsuka. Explore the Bamboo forest and proximate Unesco world heritage sites until it's your time to have some of the best beef you'll ever taste.

Agreed with others, though, that Tokyo + Kyoto may feel rushed in 7 days. You could spend a month in Tokyo and probably not get bored. Best advice I could give you is to extend the trip to 9-10 days :D 

You could also spend a night in a coastal town like Atami and enjoy the hotsprings / onsens there.

If you're into cooking knives, don't miss Aritsugu in the Nishiki Market. They've been making blades for over 400 years, and used to supply swords for the Imperial House of Japan.
