I was so hungry this afternoon I was literally shaking and I was making a carbonara but I realized my sister had eaten all my eggs (and not replaced them) so I ran to the grocery store and came back and I was so hungry I didn’t let the pan cool from the guanciale and the parm and the egg started to separate. Then I inhaled the worse carbonara I’ve ever made and now my tummy hurts ✌️

tip if you are in hurry: - you have the pan with the guanciale still on the fire - you put the raw eggs in a bowl with the parm and mix them well together with the black pepper - drain the pasta and put it in the guanciale pan - add the raw eggs mixture on top of the pasta and mix it all. serve on plates as soon as the eggs start to change texture (to your taste depending if you want the sauce more liquid or dense)
