Emu eggs are about 8-10 times size of regular chicken egg. Yolk/whites ratio is around 45/55 % versus normal chicken egg 35/65 %
Texture is far more creamy. When I worked at Attica in australia we used to make sabayon with it since it’s so rich. I made a French omelette +fine herbs+ caviar + simple salanova salad
