Romanesco for the win. What’s your go to? My wife likes to roast cauliflower with a curry blend and always is delicious.

My go to is Simple roasted cauliflower - I’ll do different spice blends, often Cajun but just salt is sometimes all I need. Romanesco is beautiful, but I don’t personally find it tastes better I was addicted to these jars of pickled purple cauliflower - would eat it one sitting, until my local Whole Foods where I used to get them stopped carrying them https://jeffsgardenfoods.com/our-products/other-specialties/heirloom-purple-cauliflower/

Yeah romanesco sometimes won’t have the same quality texture wise. Roasting brings out the sweetness so nicely.
