Are there any makes / models of commercial aircraft you would just NOT fly in? (Just thinking of passenger planes.)

Not really — I care more about the operator than the design authority / OEM. Virtually every commercial aircraft that is certified to fly is safe to be on as long as it’s adequately maintained and competently flown (IOSA registration is a good proxy for that). I don’t mind flying on a B737 MAX 8 or 9 in that case, for instance. Of course, some models correlate negatively with that — for example, I wouldn’t fly on an Ilyushin or a Tupolev, but mostly because they tend to be operated by third-world carriers with shoddy maintenance and a questionable safety culture. Same for the ATR (42/72) or similar, which is a safe design but accident-prone when operated by exotic carriers in remote locations
