Am I just being a frog brain, or are most of the recommended cherry configurations sold out? If so, any other recommendations? Thanks.

Nope, they mostly sold out. Come 1.4.18 PoMW should scale to your hardware, so getting a bigger machine would work better than the currently recommended, but just FYI that there is a 1:2:4 (cpu:ram:storage) ratio you should aim for.
