Hi Casters. I love it when two food cultures come together and make something awesome. Apparently the Lebanese immigrants to Mexico brought shawarma with them and that resulted in the al pastor taco. big fan of dishes that arose through cultural diffusion. A couple others that I'm fond of: banh mi: a combination of classic Vietnamese ingredients (plus pate) served on a baguette, introduced to the country by the French in the 19th c. vindaloo: developed in Goa in western India, derived from the Portuguese 'carne de vinha d'alhos' (meat of wine with garlic). As an interesting etymological note, many Indian chefs will include potatoes ('aloo' in Hindi) because of the false cognate. Vindaloo's journey from there to British Indian staple is a fascinating tale in its own right.
