Experiment 2: Added unsweetened pea protein powder. Not good. Made for a mealy, slightly gritty and uncooked texture though it looks good. It works great in adai but apparently not in rava dosa. At least not at levels to add nontrivial protein boost. https://i.imgur.com/aR9FbiT.jpg

Experiment 1: added some egg white to increase protein. Verdict: made it too soft and a bit blander, but tasty. Will up since levels next time, and work on proportions to fix crispness. https://i.imgur.com/eIbhI6b.jpg
