iMessage has a bizzare stranglehold on America, and I can't quite explain why this seems to be the only place its happened Can choose any of Telegram / Whatsapp / Signal, all far better products

UK has 40% iOS usage, but almost everyone uses whatsapp there. So it can't be defaults alone.

Maybe defaults kick in once you are above a certain threshold of users? If you have to use WhatsApp for 60% of your friends anyway it might just be easier to use WhatsApp for everyone.
