WHY is it so IMPOSSIBLE to find an indoor waterproof wood stain (NOT only approved for outdoor use to avoid liability)— that is NOT gosh darned Epoxy resin I have to pour and wait days for it to settle undisturbed? I want a spray (or easy paint-on stain) that makes wood waterproof that is approved for indoor use.

Outdoor is generally more focused on UV protection. It can be less water resistant than some indoor solutions. Nothing's really water proof except resin 😁 Just have to look at what you want. For example polyurethane is very abrasion resistant, but it isn't very hard. Works well for floors, but not as durable for things like furniture or hand held objects that get banged around. A shellac or other types of varnish may be more hard and suitable for various applications, depending on need. Stain in general is just for coloring. The finish layer is for protecting. Have to identify what your primary focus for protection is.
