Today, I figured out how to mimic dark mode pdfs in Adobe Acrobat.

Under preferences > accessibility > replace document colors.  You can use some presets or specify your own color combos.  It doesn't work on all pdfs, but enough of them it's a bit easier on my eyes.  And I read a LOT of stuff in pdfs lately since I'm in school and professors love to toss them around for assigned reading.
