I like having limited choices - it makes me feel like I’m in control of my choices. Allows me to evaluate my options 

Its like diners in nyc - why is there an entire page dedicated to omlettes, how can one ever feel like they could make any sort of informed decision?

Same. For my new record I am using only Stock Ableton Devices and no external plugins (except for my guitar amp emulation which runs the DSP on my audio interface so it’s flown in dirty). 

Prevents Option Paralysis and enhances creativity.
