different peppers, different ingredients.  The farmer that supplied the peppers is making his own now and its quite good.  He spun up the company after huy fong tried to extort him into selling peppers for cheaper and the farmer won with a much better product and 23 mil$ settlement. Called Underwood Ranches sriracha
