What do you think are some underrated / under explored risks for Ethereum to win?

I think the biggest risk is (always has been 🔫) crypto as a whole getting co-opted by TradFi and losing its most valuable features (self custody, permissionlessness, etc.) while price goes up and it feels like winning. Best articulation of this risk:

I think that’s a step towards it, yes, but the specific “USDC will choose the winning fork” concern is way overblown relative to many others

Wouldn’t you argue this is effectively the case right now with USDC / USDTs deep integration into DeFi? 

In the case of a contentious hard fork, e.g America says censor a block height, USDC, Coinbase etc will choose the censored chain.
