I choose different ones every week. Sometimes I’ll wait a day or two to see where votes are settling. I also only choose assets I want (USDC, ETH, OP) unless the APY is crazy high.

I’m sorry I really don’t have an answer with that. Are you LPing? Or voting? I don’t LP. The only times I have it’s been stable pools only. With respect to risk, it’s all risky, but stable pools are the only ones I would describe as “less” risky

Your screenshot shows neither the total rewards nor the vAPR. Personally I look for a total rewards of more than $5k, higher is better. And a vAPR of 30-50% on average. Higher is better. I can’t advise on particular pools. And to be clear, you have to vote weekly, so it changes. Just go with your gut.
