I'm looking for examples of DAOs that are using more of a delegation structure for voting and/or for operations, as opposed to direct democratic control over day-to-day decision making. Anyone have any good ones?

Are you talking about delegating certain decisions to people or delegation in general? I would say DAOs set up using Hats Protocol have done this, in that it allows certain roles to be granted permission to act autonomously within the scope of their role.
