Sooooo good. From New Zealand, dry brined overnight, grilled on coal, house made chimichurri-inspired topping. Roasted potatoes and mushrooms with a kale salad on the side. 🤌

Oh that’s next up! I’ve only tried it on bison burger. Any tips for aging or grilling bison steak? Should I pepper and sea salt brine for some time?

We don’t really age/marinate bison steak that much ‘round these parts but my partner and I agree that bison steaks are basically superior to any beef steaks.. She won’t say it’s better than wagyu but I would..

I'm even more intrigued! We usually get 30-40 days dry-aged or New Zealand fresh, but now I'm going to add bison into the mix.
