I’m brand new to coding / software dev.

My only experience is a few no-code platforms that might have helped me understand a bit of programmatic thinking.

There are so many languages & beyond that, so many tools for devs.

How would you recommend me learning in a way that takes advantage of the latest & greatest?

It doesn't really matter which programming language you start with, once you learn the programming concepts/fundamentals in one it's easy to learn others. 

My recommendation is to start with Python, because it's really friendly to beginners. And then you switch to Solidity. After these two: JS.

For Python I recommend book called Head First Programming (programming, not head first Python, that's a different one).

Python is the most versatile language in my experience. You can use it for backend web dev, desktop scripts, data science, even machine learning and AI (it's actually huge in these two fields). There's no waste in learning it, not even the slightest 🙂

I heard python was an easier entry 🤔 I’m still always confused about where python is actually used at all, but okay cool thank you for the recommendation!
