Will a NAS with docker be ok? I don't have a fixed ip but dddns.

For regular peers it's totally fine – the bootstrap peers ideally need to be relatively fixed – if only so that times between updates and TTLs are not gapped large enough that there's multiple failed hits before a peer can find other peers
