if I sell my fan tokens, am I still forced to follow the same 180 day vesting schedule?

Vesting schedule continues at the same unlock rate. However you can withdraw any surplus above the amount you must vest.

After you sell a fan token for more than you paid then the surplus extra profit goes to your wallet, not the vesting contract.
