Alright, since I have the qualifications of being 1/3 professional chef, maybe we do an AMA about cooking or your burning questions about food? I was in culinary school for a year and finished the first of three parts to become a certified red seal chef. I still have all my textbooks and recipes, so fire away!

Whatβs a simple dish (simple ingredients) that takes a surprising amount of skill/technique to pull off? Whatβs the trick to doing that well?

Great question. cordon bleu - chicken, ham, cheese. being able to stuff them all together in one package is hard, but its the overcooking of the chicken thats harder. the trick with it is - get a meat thermometer and use it. it is the most underrated toll in the kitchen, use it for everything
