If I do something that seems legal today, why is it they can decide later it’s not, and fuck me over? That type of thing terrifies me as a developer and artist

It's definitely frightening and totally unfair. There are lots of arguments against their ability to do this—the ex post facto clause, the takings clause, the due process clause's fair notice principle—but you can't know if you'll win until you get to court. Unfortunately, the state wields a lot of unchecked power.
