opencast is in a decent state and is pretty straightforward to run locally now. lmk if you have questions about setup

- lots of low hanging fruit for improvements still, will open more issues. being able to run it again was the main priority for this pr
- been using a private hosted instance for a few days now. not quite happy with my server's performance so might look at dedicated resources for the public version
