LinkedIn recently (and quietly) added this data tracking setting and turned it on by default for everyone. It’s a dark pattern that and some of their own employees have been calling them out (link below). If you prefer not to give away all of your data to LinkedIn’s new product development efforts, you can and should opt out. I agree LinkedIn’s practices here are sketch and I am all for individual data ownership but how is the data on Farcaster different than LinkedIn? How is it better or safer for me as an individual to engage here as opposed to on LinkedIn? Does Farcaster help protect my privacy in someway?

I’m not saying your data is any safer on Farcaster. You own some portion of it more on FC, in that you can take it with you. But the permissionless nature of the network means the data is open to everyone to use however they would like, without having to ask.
