Is there benefit to having more than 16gb RAM?

What about CPU power?

Is there an estimate of how quickly storage needs will grow?

(Planning for how upgradable certain components should be)

The "golden ratio" for nodes is 1 core : 2 GiB RAM : 4 GiB disk, if that helps

If it’s being used for other things- yes. If it’s “just a node” IMO 16gb should be fine. Your processor is equally if not more important, storage is too but those last two both really depend on the use case I’d think.
