If I had a node that I was running before and is no longer operating now, what information from that node is useful to store? Meaning what files specifically.

Simply copy the 2 .yml files they told you. They are located in /<user>/ceremonyclient/node/.config Then you should be ok, and when the time come, use them either to recover you wallet or copy/paste them into the new node you will be running
