Letting the wine touch the skin of the grape longer in the process turning white wine to orange. 

I must admit ashamedly I thought for a long time,  it meant people smashing the wines by feet, my inspiration being old movies.  🤢😅

If you’re in London (as I remember you are), you should definitely check out Denbies Wine Estate near Dorking. They make a really nice orange wine, the wine tasting is great, and you can go on some amazing walks around the estate!
